If you are a pancake or waffle lover, and you are looking for ways to make them healthier, then you should consider making protein pancakes! Protein pancakes are the latest trend when it comes to healthy mornings- they are perfect for pre-workout meals, giving you energy, as well as post-workout meals, building up muscle. There are many options out there for making protein pancakes, but my favorite way is by using the FlapJacked Protein Pancake Mix.
FlapJacked has become one of my favorite brands out there because they are easy to make and they have a good amount of protein in each serving- 20 grams! They sell 3 different kinds of mixes: Cookie, Smoothie, and Pancake & Baking mix. For the pancakes, all you have to do is add water and any ingredients you want added. I typically mix in chocolate chips, blueberries, bananas, strawberries, coconut shreds, or raspberries depending on what taste I am going for. They cook fast, they taste great, and I always look forward to mornings when I can make them.
Simple Protein Mixed Berry Pancakes (2 servings):
- 1 Cup of FlapJacked Pancake & Baking Mix
- 2/3 Cups of Water
- 1/3 Cup of Mixed Berries and Banana Slices
- Coconut Oil or Spraying Oil
- Peanut Butter & Maple Syrup (Optional)
Mix FlapJacked Pancake & Baking Mix in a bowl with water. Add in the mixed berries and banana slices. Start cooking pan on low heat to warm the surface. Add coconut oil or spraying oil to the stove top pan to prevent the batter from sticking. Pour mixed batter onto a hot pancake grill or stove top pan. Flip pancake a few times once the upper side starts to bubble, should cook in 3-5 minutes. Drizzle on peanut butter or maple syrup.
